Weigh all ingredients accurately.
- Use a digital scale to 0.1g precision for salt and yeast.
- Water should be cold (10-15°C). Cool dough ferments more evenly.
- Have everything within reach before you start mixing.
Traditional Neapolitan pizza dough with 65% hydration and a 24-hour cold ferment. Makes 4 dough balls of about 270 g.

Weigh all ingredients accurately.
Mix flour and water until no dry spots remain, then rest 20 minutes (autolyse).
Add salt and crumbled fresh yeast. Knead until the dough is smooth, elastic, and evenly mixed.
Cover and bulk rest at room temperature for 20 minutes.
Divide into 4 equal pieces (about 270 g each) and shape into tight balls.
Place balls in a sealed container and cold proof in the fridge for 24 hours.
Remove from fridge and rest at room temperature for 2 hours before baking.
Stretch each ball by hand and bake for 2 min at 450°C.
