Why high-hydration dough exposes a mixer.
A wet pizza dough is unforgiving about how it is mixed. Two things decide the outcome: how much heat the machine puts into the dough, and whether the action stretches the gluten or tears it. Below about 65% hydration most machines cope. Above it, the difference between mixer types becomes the difference between an open crumb and a dense one.

Planetary mixers and what they do to wet dough.
A planetary mixer holds the bowl still and orbits the hook through the dough. That works well for batter and stiffer bread dough. With a wet pizza dough it tends to slap the mass against the bowl, and it often pushes dough up the sides so you stop and scrape. Every stop lengthens the mix, and a longer mix means more heat. If a planetary mixer is what you own, use colder water, keep batches small, and finish development by hand with folds rather than asking the machine to do all of it.
Spiral mixers and why bakeries use them.
A spiral mixer turns the bowl and holds a spiral hook on a fixed axis, so the dough is drawn through the hook continuously rather than beaten against the sides. The action is closer to hand kneading, and it generates less heat for the same amount of development. That is why it handles hydration levels a planetary mixer struggles with. If you are shopping, the properties that matter are a rotating bowl, a spiral hook, variable speed, and a bowl sized for the batch you actually make rather than the largest one offered.
Presses shape dough, they do not mix it.
A dough press flattens an already fermented ball into a uniform disc. It is a shaping tool, not a mixing one, and for home baking it is usually the wrong purchase. Pressing expels the gas that fermentation spent hours producing, which is exactly what you want to keep in the rim. Hand stretching preserves it. Spend the budget on mixing and stretch by hand.
A machine kneading sequence that protects the dough.
This works for hydration between 65 and 75 percent. The principle throughout is to let time do the work that heat would otherwise do.
- Combine flour and about 80% of the water on the lowest speed until no dry flour remains, then rest 30 minutes
- Add the starter or preferment and mix 2 minutes on low; the dough will still look shaggy
- Add salt and the reserved water, mix 3 more minutes on low until absorbed
- Raise to medium and mix 4 to 6 minutes, stopping when the dough clears the bowl and wraps the hook
- Probe the centre: aim for 24 to 26 °C, and stop immediately above 27 °C
Watch the dough, not the clock.
Mixing time depends on the protein content of your flour and on the temperature of your kitchen, so a fixed number of minutes is a starting point rather than an instruction. A strong bread flour develops faster than a softer type 00. After mixing, bulk fermentation timing shifts with temperature too.
